Awhile back I came upon this fancy brunch dish called the Egg In A Cloud. While it looks fancy, it doesn’t look that hard to make.
Egg in A Cloud is egg whites that have been beaten until stiff that are mounded on top of a piece of the toast. Then the egg yolk is is slid into the well in the center of the “cloud.” Cheese and salt and pepper is added, the whole thing is baked, and it turns into this lovely, fluffy breakfast.
If you want to try it, here’s a basic version using toast and another using ham and Swiss cheese.
